For dairy not lack on Shavuot, you can surprise family and friends with these – different -latkes. They do not contain potato, like the originals, but rather a delicious tomato sauce to go with them.
Ingredients
1 cup shredded mozzarella cheese
1/3 cup flour
3-5 eggs, according to your taste (use less eggs if you prefer a more intense cheese flavor)
Oil for frying
For the sauce
1 roasted tomato
½ clove garlic
2 tablespoons olive oil
Instructions:
Mix the cheese, flour and eggs. Heat the oil in a large skillet.
Prepare small patties with the dough and fry each side until golden brown.
Place the “latkes” on a plate covered with paper towels.
To prepare the sauce, put all the ingredients in a food processor and chop.
The latkes and sauce can be served hot or cold.
