Ricotta and Strawberries Burekas

If you are a fan of dairy products, for obvious reasons your favorite holiday is Shavuot. The burekas are exquisite stuffed puff pastries, which when fresh from the oven taste heavenly.

Ingredients
1 sheet of puff pastry cut into 10 cm squares approximately
¾ cup finely chopped strawberries
1/2 teaspoon sugar
3/4 cup ricotta cheese
1  1/2 tablespoons of sugar
1/2 teaspoon of vanilla extract
1 egg
Sugar

Instructions:

Mix the chopped strawberries and sugar (1/2 teaspoon) in a small bowl and it let stand for 5 minutes. In a separate bowl, mix the ricotta with sugar (1 1/2 tablespoons) and vanilla essence.

Beat the egg with a little water. Cover a baking sheet with foil and spray with a little cooking spray.

Fill each square with about 2 tablespoons of ricotta and about a teaspoon of strawberries, leaving at least half a cm free from the edge. Brush some beaten egg along the edges of the pastry dough and seal into triangles. Use a fork to press down along the edges. Brush tops with egg and sprinkle with lots of sugar.

Place the Burekas in the freezer for at least 30 minutes.
Preheat the oven to medium heat and bake until golden brown and flaky, about 18-20 minutes.
